How to brew loose leaf green tea

WATER

The quality of water can change the quality of your tea experience. My Green Tea highly recommends distilled water to ensure a healthful cup of tea.

Mineral water may also be used in tea, however if it’s too concentrated with minerals the tannin (natural phenols and polyphenols are compounds found naturally in plants -researchers have found that they contribute to better health) cannot be fully extracted from the tea, so we recommend a mineral water that doesn’t contain too much calcium.

Measure out the desired amount (or suggested 2 tablespoons) of Sencha Gold, Sencha, OR Kukicha and place them in a teapot/strainer of your choice. *The larger the strainer the more room the tealeaves have to expand.

Fill your hot water maker/pot with water (we recommend distilled water) and heat it to about 160°F. If you don’t have a thermometer to measure the temperature just let your water sit for approximately 2-3 minutes after bringing it to a boil. (PLEASE DON'T BREW THIS TEA IN BOILING WATER)

After pouring your water in your teapot, let it steep for 1-2 minutes (for Kukicha, let it steep for 30 seconds – 1 minute). Strain (or pour) until all the tea is out –especially if you plan to re-brew… leftover water will make your next brew very bitter.

UTENSILS (MATCHA/CEREMONIAL)

Matcha is usually enjoyed in a ceremonial style and the formal tea ceremony items include:

  • Tea Scoop (Chashaku)
  • A slender bamboo (though they can be made out of wood or lacquer)
  • Tea sift: My Green Tea recommends sifting the Matcha before use.

Optional Materials:

  • Natsume or Usuki lacquerware container for usucha (powdered tea)
  • Hishaku A ladle to pour the water.
  • Kama & Furo (Kettle & Brazier) The kama is placed on the furo to boil.
  • Kensui A pot in which the water used to wash the Chawan in poured.
  • Mizusashi A jug. The water in the mizusashi is used to wash the chawan (teacup) or poured into the kama

Sift into your tea bowl. This will allow a more feathery consistency.

Heat your water to approximately 175°. If you don’t have a thermometer to measure the temperature just let your water sit for approximately 1-2 minutes after bringing it to a boil. Pour ¼-½ cup of water into your bowl.

Whisk briskly with one hand holding your tea bowl; continue whisking until a fine-light-bubbly green foam appears on the surface. This adds a fluffy texture, making it easier to drink this bittersweet tea.

  • This is the minimum amount of leaves to ensure a healthy and delicious brew. Though this depends on the tea drinkers taste, so we strongly urge our drinkers to experiment.
